Creamy Red Pepper Pasta

Ingredients
For the sauce
100g Roasted red peppers
1 Clove of garlic, minced
40g Cashews, soaked
300ml Almond milk
1 Tsp red chili (dried or fresh)
For the pasta
110g Buckwheat pasta
A large pot of salted water
Garnish with
Basil or parsley (optional)
Directions
Soak the cashews in water overnight, or for 8 hours. Or if you’re in a pinch, you can place them in a pot of boiling water for 5 minutes.
Bring a pot of water to boil with a pinch of salt. Tip in the pasta and follow the cooking instructions on the packet of pasta. Once the pasta is cooked, drain it and return the pasta to the pot.
To make the sauce, rinse the cashews that you have soaked and pop them into a blender. Add in the red peppers, garlic, chili and almond milk. Put the lid on the blender and blend until smooth.
Add the sauce to the pot with the pasta and gently heat for 1-2 minutes. Salt and pepper to taste. Remove the pot from the heat, and serve. You can garnish it with a little basil or parsley for a refreshing taste and a pop of colour.
