Coconut Quinoa and Kale

Coconut quinoa & kale
Serves: 2
Ingredients
200g Quinoa
1 Clove of garlic
½ Onion, diced
1 tsp Ginger
1 tsp Turmeric
120mL Coconut milk
400mL Vegetable stock
100g Kale
Top with
Coriander and almond flakes (optional)
Directions
Heat up a non-stick pan, once hot add the garlic and onions to saute. If they start to stick, add a little bit of water to the pan. Once sauteed, add in the ginger and turmeric, and cook for another 2 minutes. Then stir in the quinoa followed by the vegetable broth and bring to a boil.
Once it has reached a boil, reduce the heat and simmer until most of the liquid has been absorbed (about 15 minutes).
Finally, add the coconut milk and kale. Continue to stir and cook for another 2-3 minutes until the kale has wilted. Top with fresh coriander and flaked almonds.
